Thank you for your call on regarding the mechanical inspection. As you are well aware of from building
many of our restaurants, we have never had a two hour rated hood system. The two burner elements that
we have are for boiling beans.
I have enclosed a menu for your examination. We use rice cookers, cold vegetables and beans to make our
Wraps (burritos). Our concept is "High Energy" "Healthy" food, The thought of fat, fat flying, broiling or
any other method of eercinbgens or unhealthy way of cooking is completely against everything that we
stand for.
