Because of the modular design, dispensers can be installed individu- ally or combined to meet specific needs. The button - activated spray bottle dispenser uses a manually operated water valve which, when the button is pressed, allows water to flow through a Venturi proportioner, drawing concentrated product and mixing it with water to the proper ratio. The air gap eductor is an unobstructed, vertical distance through the air that separates an outlet of the potable water supply from any potentially contaminated source. The air gap ensures maximum and reliable backflow protection. Each bottle - activated spray bottle dispenser is configured to allow product dispens- ing only into the appropriate spray bottle. Each bottle features a specific, geometric neck shape which only matches the inlet of the appropriate dispenser. This lock -out feature prevents product from being dispensed into improper containers. Inserting a bottle into the dispenser activates the water valve, allowing water and product to be properly mixed and dispensed. My company, National Engineering, Ltd. specializes in the design of restaurants and works in many states across the nation and is currently responsible for roughly 80% of the Chipotle Mexican Grills. In that capacity we have seen this section of code become a topic of discussion on many of our recent projects. In most cases I have spoken directly the code official about the proper solution to this the requirement. My recommendation is not to use the heat sensor as is suggested in the code but instead use a solenoid gas valve and when required a shunt trip breaker to perform the same task. The reasoning behind this recommendation is that the grease duct is a very dirty environment and introducing a heat sensor into this air stream will result in maintenance issues, false or delayed tripping of the sensor plus there is the potential breech of the welded grease duct system to install the sensor. The use of the solenoid gas valve however, uses a piece of equipment that is already present (part of the hood fire suppression system), and it is outside the hood and therefore less prone to be damaged or requiring additional maintenance. In each case when I have been able to discuss this with the code official they have agreed that this would be a preferred method. To date we have only done the heat sensor once and that was because the contactor reacted without asking the advice of our expertise. On this topic I have gone so far as to send a proposed revision to the International Code Council (see attachment) to address this and I have not yet heard back on their decision to adopt my recommendation. Please feel free to contact me if you have any questions. Rich Project vo ; ,v: oosam; 2. A Type I I hood is not required for dishwashers and potwashers that are provided with heat and water vapor exhaust systems that are supplied by the appliance manufacturer and are installed in accordance with the manufacturer's instructions. 3. A single Tight -duty electric convection, bread, retherm or microwave oven. The additional heat and moisture loads generated by such appliances shall be accounted for in the design of the HVAC system. 4. A Type II hood is not required for the following electrically heated appliances: toasters, steam tables, popcorn poppers, hot dog cookers, coffee makers, rice cookers, egg cookers, holding/warming ovens. The additional heat and moisture Toads generated by such appliances shall be accounted for in the design of the HVAC system. design. 5. Any appliance having an engineered exhaust system incorporated as part of the app ' Itance 9 n Reason: The purpose of the proposed change is to clarify the code requirements and allow more dste required nforc to en be under type I hoods. This The code does not explicitly state that medium duty, heavy -duty, and extra - heavy -duty app the requirement is only implied by section 507.13. Section 507.13 is used to determine exhaust rates and is Current not the ode tenors requirements section for a fermi hood type of hood required. Section 507.2 is the section that provides guidance on hood type requirements. are based on whether the cooking appliance generates grease or smoke and only includes a few examples. It is common practice for the AHJ to evaluate some cooking appliances on a case - by-case basis taking into consideration type and frequency of cooking as it relates to grease and smoke production. Based on this line of reasoning, it is not uncommon for the AHJ to determine a medium -duty appliance (such as conveyor style pizza ovens or rotisserie ovens) does not produce significant amounts of grease or smoke and therefore belongs under a type II hood. When this occurs the code does not offer any guidance on the minimum required exhaust rate. Section 507.13 only specifies exhaust rates for medium -duty appliances under type 1 hoods or light duty appliances under type 1I hoods. There is no category for medium -duty appliances under type II hoods. In summary, since there is no guidance for medium -duty appliances under type II hoods, one can only assume the code does not intend to allow this situation. The code needs to be changed to clearly required type 1 hoods for anything other than a light -duty appliance. Proposed change to Section 507.2.2 is to keep the format consistent with 5072.1. Cost Impact: The code change proposal will increase the cost of construction for those jurisdictions that may have allowed the installation of medium duty appliances under type II hoods. Grease buildup, air flow turbulence and lack of proper maintenance could result in the fan starting and stopping when not expected. Besides, the ASSE 1055 standard used to conduct testing is the latest version. Therefore, Report No. 605 is still valid. Our engineering review and physical inspection of the EXACTA /SmartShape system as described below enabled us to conclude that the products are in compliance with the standards ASME A112.1.2 -2000 and ASSE 1055 -1997. EXACTA /SmartShape dispensing system has a one -inch opening of air gap, served as an internal backflow preventer. In addition, by examing the installation instruction, the installation of discharge hose with 4 mm diameter should hang 2 to 3 inches above floor, which is more than 1.5 inches, the requirement of air gap in ASME A112.1.2. Thus, EXACTA /SmartShape dispensing system is determined to be in compliance with ASME A112.1.2 standard Approved by, Tsan -Liang Su, Ph.D. Director, Laboratory Operations STEVENS Institute of Technology April 4, 2000 Michelle Meade Kay Chemical Company 8300 Capital Drive Greensboro, NC 27409 Stevens Institute of Technology Castle Point on Hudson Hoboken, NJ 07030 201.216.5360 Fix: 201.216.5593 Department of Civil, Environmental and Coastal Engineering Subject: Report No.605, Review and Evaluation of Backflow Protection in Kay Chemical Company Dispensers Dear Ms. Meade: Enclosed is our Report 606, Review and Evaluation of Backflow Protection in Kay Chemical Company Dispensers EXACTA"' System/SmartShapermSystem/ StnartSinkTM System. Konen, PE Dispenser Name(s) 1. EXACTA" System / SmartShapeTM System & SmartSink"" System 2. EXACTA"' System / SmartShapeTM System & SmartSinkTM System Rpt 605, Pg. 1 It is the policy of Kay Chemical Company, a major manufacturer of dispensers and cleaning products for commercial service including restaurants, offices and other facilities to design and construct their equipment with built -in protection devices to safeguard public health by protecting the water supply from backflow. In overseeing this policy, Kay Chemical Company has retained Stevens Institute of Technology to review their equipment and evaluate the protection systems to determine their compliance with national standards and good engineering practice. The objective of this engineering review of Kay Chemical Company equipment is to gather the required technical information enabling an assessment of the backflow protection integral to their equipment and determine compliance with national standards. A second objective is to present the protection systems in a uniform format for the convenience of local authorities and regulatory agencies. This investigation and study addressed the following Kay Chemical Company Equipment: Description - Bottle- Activated Spray Bottle Filler - Button - Activated Sink or Mop Pail Filler As new equipment is developed and added to the product line, the report will be revised. ENGINEERING REVIEW AND ANALYSIS CONCLUSION The findings of this engineering review and analysis of the safety systems described herein enable us to conclude that the Kay Chemical Company dispenser systems conform to nationally recognized regulations and good engineering practices. Rpt. 605, Pg. 2 Each piece of equipment, listed in the Scope of Study, has been reviewed and information related to the protection of the potable water supply gathered. This information includes: application or use, description of product dispensed, inlet connections, internal protection, installation of protection device, additional safeguards and the outlet. The results are given in Table 1. In addition to the technical information described above, schematic drawings illustrating the dispenser design, water flow paths, and protection devices have been developed and are given in Figures 1 through 4. The two dispensing systems listed use an air gap eductor. The eductor consists of a nozzle physically separated from a venturi section where cleaning agents are drawn into the flowing water and mixed as the stream exits the unit. Several eductors with built -in air gaps, tested and approved by numerous national and international authorities, have been determined suitable for the Kay Chemical Company dispensers. Two of these are: 1. Dema Engineering Co., 1 GPM and 4GPM 2. Hydro Systems Co., 1 GPM and 4GPM The self contained 1 inch air gap per ANSI A112.1.2 acts as a Type A backflow preventer and establishes product compliance with ASSE Standard 1055 — Performance Requirements for Chemical Dispensing Systems, 1997.
