Tests shall be conducted in the presence of the Plumbing Inspector. It shall be the duty of the holder of the permit to make sure that the work will stand the test prescribed before giving notification that the work is ready for inspection. 7: No water, soil, or waste pipe shall be installed or permitted outside of a building or in an exterior wall unless, adequate provision is made to protect such pipe from freezing. All hot and cold water pipes installed outside the conditioned space shall be insulated to minimum R -3. 8: Plastic and copper piping running through framing members to within one (1) inch of the exposed framing shall be protected by steel nail plates not less than 18 guage. 9: Piping through concrete or masonry walls shall not be subject to any load from building construction. No plumbing piping shall be directly embedded in concrete or masonry. 10: All pipes penetrating floor /ceiling assemblies and fire - resistance rated walls or partitions shall be protected in accordance with the requirements of the building code. 11: Piping in the ground shall be laid on a firm bed for its entire length. Trenches shall be backfilled in thin layers to twelve inches above the top of the piping with clean earth, which shall not contain stones, boulders, cinderfill, frozen earth, or construction debris. 12: The issuance of a permit or approval of plans and specifications shall not be construed to be a permit for, or an approval of, any violation of any of the provisions of the Plumbing Code or Fuel Gas Code or any other ordinance of the jurisdiction. 14: Food preparation shall be limited to cleaning and cutting vegetables and assembly of sandwiches. Applicant shall install a grease interceptor under the three compartment sink. This grease interceptor shall be maintained by an outside company on amonthly basis and trip tickets from the grease hauler shall be submitted to Public Works. 15: The grease interceptor shall be installed per manufacturers specifications. I understand that it is the City's goal to have each food service establishment producing less than 50 ppm of FOG in their waste streams. Yes, I have submitted for a building permit. The permit number is 009 -013 and Dave Larson is the Plans Examiner who has reviewed the file. As far as feasibility is concerned, I would like to add that the estimated cost of what the city requires for grease interceptors is more than 30% of my total TI's construction budget. That is a huge burden for a small business — especially in today's economic environment. When the City of Sammamish recently waived a Subway's requirement for a grease interceptor, they permitted the use of a smaller under - the -sink style grease trap to be used in its place. This is something that appears to be more appropriate for a Subway. In the case of our heat and eat food, the food is heated in a microwave or in our toaster ovens while on a sheet of wax paper. After warming, the wax paper is discarded into the garbage — thus not releasing any grease into the drain. b. As far as baking the bread and cookies is concerned, both these items arrive in "frozen ready to bake" form at Subway restaurants. Bread and cookies are taken directly from the freezer and placed on silicone bread forms to bake in our bread oven without the use of any cooking oils or sprays. c. Salad dressing oil and mayonnaise would be the only source of grease in a Subway restaurant. However, both these items are placed on ready to eat sandwiches and salads, and as a result, are consumed, taken out or discarded in the garbage with their containers, by Subway customers — once again not resulting in any discharge of grease to the drain. e. Cleaning of food holding smallwares — all meats are held in their respective sealed plastic packaging until ready for consumption. Then they are transferred to serving cambros and held in these cambros for a maximum of 48 hours. During this holding time, trace amounts of naturally occurring grease from meats can transfer on to the cambro containers. During dishwashing, this trace amount of grease is released into the drain. While this is a source of grease in Subway drain discharge, the minute quantities of this grease is well -below a threshold where it can be reasonably measured (not even a sheen is visible). At the 3- compartment sink maximum discharge rate of 45.8 GPM, 50 ppm equates to 0.00229 gallons of grease or 0.3 ounces. Remembering that Subway's brand positioning is low -fat healthy products, it is highly unlikely that this amount of grease would come from this method of grease transfer. 0.3 ounces of grease would be clearly evident in the 3- compartment sink (floating on top), however none is visible. A listing of ingredients used at Subway Restaurants is as follows: • Vegetables: Fresh — Lettuce, Onions, Tomatoes, Green Peppers, Spinach. All are washed, cut and served on sandwiches and salads. • Vegetables: Packaged — sliced olives, sliced pickles, sliced peppercinis, sliced jalapenos. All are packaged ready to use. • Meats: Ready to use packages - Sliced Turkey, sliced roast beef, sliced ham, sliced salami, sliced pepperoni, cold cut trio (pre - portioned turkey based bologna, salami and pepperoni). • Meats: Frozen heat and eat packages (pre- cooked) — steak, chicken strips, chicken breast, meatballs. • Bread: Frozen bread sticks ready to bake. • Cookies: Frozen ready to bake. • Sauces: Salad dressing oil, salad dressing vinegar, mayonnaise, mustard, sweet onion sauce, honey mustard sauce, chipotle southwest sauce, ranch sauce, marinara sauce.
