The revised plans either do not meet certain requirements of Title 5, Code of the King County Board of Health (Rules and Regulations 05 -06), or are missing pertinent information required to complete the review process. In order to complete the review, the following information must be provided: Physical location of handwash stations for full service seafood islands: 1. Submit documentation of approval from the City of Tukwila for the changes to the additional hand -wash stations. This should include the reduction of walkways in this section of your store. 2. Submit documentation showing the drain line details for the proposed hand -wash stations. Note that these stations must be directly drained or else you must provide a letter from the City of Tukwila stating indirect drains for a handwash sink are acceptable. N 3. Provide water heater specifications. 4. Provide vertical drawings or a side view of the hand -wash stations. Provide information on the overall height of these units. 5. Provide information showing what is below the sinks. Any cabinetry? If so, what surface finishes? 6. Provide information on where the extra soap and paper towel storage are to be located? Will there be any storage below the sinks? After reviewing the Operational Plan submitted on August 2, 2010, the following items were identified which need clarification: 1. Provide a copy of the flyer /brochure being distributed to customers (is page 2, left photo, a copy of what you are handing out ?) 2. Provide information to us indicating the tracking of sales per hour compared to staffing levels for the same period of time. We will need this information so we can determine if the staffing levels are adequate throughout the daily operations of your food service establishment. 5. Procedures on how adequate temperature control of seafood will be monitored (Temperature logs on seafood may be required if cold holding violations are documented.), 6. Maintenance procedures and cleaning schedule of the seafood islands – how they will be cleaned and sanitized, and how often, 7. Procedures for disposition of leftover seafood not sold at the end of the day. The revised plans have been assigned the following plan review service number (SR #1196255).
