Attached is drawing A3.0 that shows item 1 as the grease interceptor with size and capacity, and the kitchen layout.shows the location of the grease interceptor. Also attached is a cut sheet from MIFAB for a MI -G model hydro mechanical grease interceptor. We propose to install the largest of this model MI -G -7 that has a capacity of 50 GPM. The client has informed me that for this franchise restaurant they already have installed about 5 of this grease interceptor in jurisdictions like Renton, Kent, Lynnwood, Bothell, and Marysville. These locations are currently operational. The client also informed me that most of their items are received already cooked and ready to heat & serve. Only the items such as pico de gallo, guacamole, etc. are prepared at the restaurant. Very little deep frying is involved. In my opinion, in light of the above, installing a minimum 1000 gallon grease trap on the outside of the restaurant would be overkill. This would involve excavating the parking access, removing new sidewalk just installed, and major restoration that will cause a major disruption in the flow of traffic. Also, I believe the drawings ought to be reviewed by plumbing review staff. I request you to reconsider that the-proposed grease interceptor on the interior should be allowed.
