APPLICATION A grease interceptor is necessary where fat, oil, grease, (FOG) or other similar line clogging contaminants are present in waste water that must be disposed of through the sanitary system. Preventing grease from entering drainage lines should always be considered when designing the plumbing drainage system in any residential or commercial building having facilities for the preparation and serving of food in quantity. In these installations, where fat and grease are a by-product, an efficient 800 Series interceptor should be installed to prevent this material from entering the drainage lines. HOW THE INTERCEPTOR OPERATES Water draining to the interceptor passes through a flow control fitting which regulates the velocity of the water to the capacity of the interceptor. As the water enters the interceptor at this controlled rate of flow, it is free of turbulence. It then passes over separator baffles which are positioned to insure that fat, oil, and grease are efficiently separated from the waste water. Once separated, these contaminants rise to the surface of the water in the interceptor by natural flotation and are accumulated until removed. The waste water, now relieved of over 90% of contaminent oil and grease, continues to flow through the interceptor into the sanitary systems. PROCEDURE FOR SIZING STEP 1 Determine the cubic content of the fixture by multiplying length x width x depth. A sink 48" long by 24" wide by 12" deep Cubic content 48 x 24 x 12 = 13,824 cubic in. STEP 2 Determine the capacity in gallons. • 1 gal. = 231 cubic inches. Contents in gals. 132314 , 59.8 gals. STEP 3 Determine actual drainage load. The fixture is usually filled to about 75% of capacity with waste water. The items being washed displace about 25% of the fixture content. Actual drainage load = 75% of fixture capacity. Actual Drainage Load .75 x 59.8 gals. = 44.9 gals. STEP 4 Determine the flow rate and the drainage period. In general, good practices dictate a one minute drainage period, however where condi- tions permit, a 2 minute period is acceptable. Drainage period is the actual time required to completely empty the fixture. Flow Rate = Actual Drainage Load Calculate flow rate for 1 minute period. Flow Rate 44.9 gals. , 44,9 GPM 1 Min. For 2 minute period Flow Rate 44.9 gals. , 22.5 GPM Drainage Period 2 Min. STEP 5 Select the Interceptor which corresponds to the flow rate calculated. Note - Select larger size when flow rate falls between two sizes listed. For 1 minute period 44.9 GPM requires a Fig. 800-03-50 For 2 minute period 22.5 GPM requires a Fig. 800-03-25 Environmental Health Services Division 401 Fifth Avenue, Suite 1100 Seattle, WA 98104-1818 206-263-9566 Fax 206-296-0189 TTY Relay: 711 www.kingcounty.gov/health February 10, 2014 Artlessa Wilborn 5732 S Ryan St. Seattle, WA 98178 206-265-0815 • Public Health 2 Seattle & King County Also Transmitted Via Electronic Mail RE: Plans and Specifications for the conversion of the former "White Horse Bar & Grill" into the new take out/barbecue style food service establishment known as: The Southern Grill • 14935 Interurban Ave S, Tukwila, WA 98168 CITY OF TUKWILA R c iVED SR1347751 P/E - 6703 Dear Ms. Wilborn, i PERMIT CENTER i (14A The plans and specifications for the above new/remodeled project have been reviewed and, in accordance with the provisions of Title 5, the Code of the King County Board of Health Rules and Regulations 05-06 (The Food Code) are hereby APPROVED and subject to the following conditions: • It is understood that there will be overnight and/or unattended cooking/smoking of meat products ...with approved monitoring devices. All correction requests from each department must be addressed at the same time and reflected on your drawings. I have enclosed comments from the following departments: BUILDING - C DEPARTMENT: Allen Johannessen at 206-433-7163 if you have questions regarding these comments. 1. Some items shall require additional clarification. The plumbing drawings shall require a design by a design professional. Per your response on the previous correction memo, the plans were provided by a professional architect. The design professional providing drawings and documents shall have their architect or engineers stamp information on the documents. Please provide the architect signature and stamp of the design professional providing those drawings. 2. Attached to this memo is an example of what is expected for a plumbing plan and drawings. The handout is for residential; however the design is still the same or similar requirement for commercial. 3. The drawings provided were confusing to follow and maybe a little more information than what is needed. The floor plan either was not included or it was not clear with the documents provided. The sizing of the grease interceptor appears to be ok. Provide drawings that are clear and concise showing the plumbing for this project prepared by a design professional as indicated above. Number all sheets. Include dimensions for the rooms or spaces. Please follow the handout examples provided. Please address the attached comments in an itemized format with applicable revised plans, specifications, and/or other documentation. The City requires that four (4) sets of revised plan pages, specifications and/or other documentation be resubmitted with the appropriate revision block. In order to better expedite your resubmittal, a' Revision Submittal Sheet' must accompany every resubmittal. I have enclosed one for your convenience. Corrections/revisions must be made in person and will not be accepted through the mail or by a messenger service. If you have any questions, I can be reached at 206-433-7165. The plans submitted for this plumbing permit are not adequate for us to verify compliance with the 2012 Uniform Plumbing Code. It may be necessary to enlist the aid of a plumbing professional or an engineer that has experience in preparing drawings. Response: • The new plans have been revised by a professional architect and are in compliance with the 2012 Uniform Plumbing Code. • Please see revised drawing on exhibit A. 2. An isometric line drawing is needed for both, the drain, waste and vent system and the water system. Floor plans were provided but are not to scale and are not drawn in a way that I can understand. For example, on the floor plan, page 2, you show a prep sink draining into a grease interceptor through a pipe depicted with a double line. The tailpiece from the prep sink also has a single line 2 -inch pipe extending to the right and connecting to a 2 -inch line coming out of the grease interceptor. Is this intended to bypass the grease interceptor? A prep sink would need to be connected to a floor sink via an indirect waste. Venting is not shown and the 2 -inch pipe eventually ties into a box with the numbers 10, 10 and 8 on the inside. What is this? This box and a sink on the opposite side of this box are not connected to a grease interceptor. The triple sink is not shown on this plan. Response: • Please see revised plans and drawings in Exhibit A ... All items in #2 has been corrected. 3. A plan was provided for the triple sink and a 50 gallon grease interceptor. A spec sheet was provided for a 25 gallon grease interceptor and installation specifications were not included. Plans and provided specifications need to match. This plan, page 1, is missing p -traps, appropriate sink and grease trap venting and uses labels on parts that need clarification such as P/C and D/S. Response: • According to the 2012 Uniform Plumbing Code, the Grease interceptor for 3 (three) compartment sink, and prep sink were all sized according to the rate of incoming flow, in gallons per minute (GPM) - please see exhibit C. • Specifications and installations for 25 GPM - please see exhibit D. • All items in #3 has been corrected. Note on the plan that it will be removed or showing it remaining in the plans. Response: • Please see floor plan of the entire restaurant on exhibit D & E which include a drawing of all fixtures and cooking equipment, including the grease exhaust hood. • On January 8, 2014, I talked with Mr. Cusick and he has authorized us to use an hydromechanics grease interceptor. • All items in #5 have been answered and corrected. 6.
