To provide this, a stove is needed to for student to practice cooking skills. It has come to my attention that to get the permit to provide ventilation the city requires confirmation that no meat will be cooked. Beginning today, no meat will be prepared on the stove. All correction requests from each department must be addressed at the same time and reflected on your drawings. I have enclosed comments from the following departments: FIRE DEPARTMENT: Al Metzler at 206-971-8718 if you have questions regarding these comments. • IMC Table 507.2.2 states that pan frying requires a type 1 hood. Ms. Olsen's letter references the cooking of Hamburger Helper which requires the pan frying of ground beef. There can be no pan frying of meat unless a type 1 hood is provided. If Ms. Olsen would provide a letter stating there will be no pan frying of meat, the type 2 hood would then be acceptable. Please address the comments above in an itemized format with applicable revised plans, specifications, and/or other documentation. The City requires that two (2) sets of revised plan pages, specifications and/or other documentation be resubmitted with the appropriate revision block. In order to better expedite your resubmittal, a'Revision Submittal Sheet' must accompany every resubmittal. I have enclosed one for your convenience. I have been asked by our Director of Maintenance and Operations, Liliana Cardenas, to write a letter explaining the types of cooking will be occurring in my classroom with students and why a residential stove hood is appropriate for this setting. My curriculum addresses basic functional life skills. This requires me to be able to teach students simple cooking techniques such as making their favorite foods so they will be able to be more independent as they get older. The basic cooking/baking included items such as, but not limited to: pizza, pancakes, grilled cheese sandwiches, warming up soup, boiling water, and simple meals, for example: macaroni and cheese, spaghetti, rice, hamburger helper, etc. This functional life skill encourages and fosters student independence. It should be noted that this lays the ground work for the basic functional life skills expectations in the Foster High School LRC2 program before the student leave the public school system. We will be cooking/baking for the class which currently consists of 7 students and would not exceed 15. I hope this letter describes the need for the residential hood that the district is trying to get permitted and installed in my classroom. This hood will be more than adequate for the cooking that will occur in the classroom. There is no need for a commercial hood in my classroom.
